Rainbow Dash isn't the most patient sort, so I imagine she's the most easily triggered of the lot. Pinkie Pie tends to bounce back fairly quickly after being riled up. Applejack is very cool and level-headed most of the time, but can get pretty nasty when provoked. Rarity doesn't seem to have a notable temperament problem. Twilight can be pretty scary. I mean, she did burst into flames in Feeling Pinkie Keen.  Fluttershy is the least likely to lose her cool given that she has the patience of a saint, but once she does lose it, you better look out because it's not gonna be pretty.

 

Dash is the easiest to anger, but Fluttershy is the most frightening by far. It's a toss-up.

Twilight:  Most likely to do the most magical harm

Rarity:  Easiest to actually anger

Applejack:  Most likely to do the most physical harm

Fluttershy:  Most likely to do the most emotional harm

Rainbow Dash:  Hardest to escape from

Pinkie Pie:  Scariest due to unpredictability

 

This is about my feelings here. Rarity is very irritable (see; Sweetie Belle), but Fluttershy can be HARSH.

Dashie is pretty chill. I'd put her next to Pinkie Pie at the bottom, honestly. She can get irritated, but she doesn't do much with her anger other than complain.
