There are many films and television shows that depict female officers being called "Sir". Battlestar Galactica did.

In real life, females are usually referred to as 'sir's' rather than ma'am or anything like that.

And besides, you know mares have all the important positions in this show. Stallions just run doughnut shops.

This was either something overlooked by the production team, or it was put in on purpose. Female officers are called 'sir' in the military.
