Well, that's kind of what my point was initially. A symbol and a mark are two different things. You wouldn't create your own ponysona and have their cutie mark be just your initials. Letters or numbers are awfully specific; symbols can be unique to cultures rather then embodying the concept itself. No doubt there's many symbols for measurements in baking or the various parts needed, but its just simpler & cute to just slap a cupcake on there because your character likes cupcakes.

   There's deep, and there's inanely deep. Being essentially a cartoon character is sort of the point in making a pony because this is, after all, a cartoon kids' show world that follows its own sort of theme. Using, say the astrological symbol for mercury, pins you down to a very, very specific niche knowledge, rather then making something up yourself which can allow for enough budgeroom for others to sort of follow your own thinking & therefore the original intent you put into it. For example, the one I've been thinking of for a while is just an equilateral triangle with a crack along one side. Somewhat earthy. Better to be you foremost, I say.

 That's not to say that you can't go deep, of course. Your example would work well if your OC was crafted, like a Golem of some sort. I've got a pony that has a number for a cutie mark! Because it's bolted into her flank as a nameplate! Because she's a brain in a fully cyborg body! 

interesting idea. I've just never been able to follow the cute, simple limits the show sets. Its a little too silly, but I guess thats why I like the show, for simplicity, but I cant get my own thoughts down to that level myself, so I'll think about it. Or should I not think about it at all and just go insane? Im normally good at making OCs but MLP OCs are a mystery to me.
