Eh, Rarity I can excuse. It's like one of those creative choices you don't really think all the way through. Like it was a novel idea & she wanted to involve a friend... and didn't think AJ would go that full... well, evil.
Applejack was a straight-up villain there. I think when you are directly destroying something right in front of the pony who just got done saying how much work she put into it and saying its a hazard and danger in its current state... your being a colossal jerk.
But you're right. And so was AJ from the start. She don't get it, then she doesn't get it. She's there for practicality. There's no harm in her saying that she thinks fashion is stupid & silly. If they don't like it, then fire her. She's got a farm to take care of.
...There is harm in blatantly assaulting others and kidnapping them to a room, tying them up, and trying to "convince them to stay" against their decisions. What? The only thing keeping this pageant going was just AJ?
Though, have to say that despite this being her only showing, I just adore Strawberry Surprise! "Well, I'm sorry that you can manage to actually put your mouth into those disgusting apples." Pony of Sick Burns, Yo! I love how there was not a moment's hesitation in Rarity's mind when she needed another mare as an example of being pointedly opinionated!
How AJ hasn't learned that honesty needs some tact already... I don't know.

Well I'm just suprised that Rarity didn't pick a SUITABLE judge for her fashion contest. Applejack has NO knowledge about fashion and she's just a simple pony who works on the farm. I will admit: the stuff AJ in that episode was un-called her. I know the REAL AJ wouldn't do stuff like that. They just wanted to add some flaws and they didn't do a good job
...as for the part with Strawberry Sunrise (...wow, what a stupid name...) and where she said "that she doesn't like apples" for the first time, the REAL AJ would've normally said: "Well...that's your honest opinion. Every-pony has theirs..."
...and she would've just walked away, feeling calm / smug without any care and leaving Rarity pissed off, but no...

Eh, think WhiteHorse was intentionally trying to pick somepony unexpected for the job. Though, pretty sure AJ has butted heads with her on fashion at least twice now with what should be memorable results.
There's adding flaws, and then going a few lines too far with it. Guess we've kind of all taken our character traits a bit too far sometimes, like that one episode... the, uh... the "AJ is too stupid to work efficiently or know how to take a day off" episode. ...Oh. Right. Applejack's Day Off. That, I could excuse more than this episode. Stubborness is a bit more understandable than blunt force honesty.
And that's Strawberry SuPrise! Liked that though, got the feeling that conversation wouldn't have gotten so snippy if things hadn't gotten heated. Kind of like Internet Arguments. Get emotional and and neither side gets anywhere unless you just drop it to go on with your day like our farm mare would of.
But think that's kind of the writers playing on the whole fandom meme of "Insult apples around Applehorse and you're asking for trouble!" Can't really blame them for playing on the gag, at least if they're doing it well.
...wait... wasn't the whole "parent's flashback episode" all about AJ learning to shut your yap when it ain't called for?
