I actually like that theory a lot. I prefer the version of young Celestia where her mane is pink.

As Lord Valtasar mentioned, we do see Celestia with her multicolored mane in flashbacks before and during her banishment event. But Hasbro is known for being extremely inconsistent and failing to stick to any kind of continuity (especially in later seasons). And we do see in the very first episode that Celestia's mane was pink when they still ruled together before Luna's banishment, and even at the time Celestia was using the elements to banish her.

I (at least for the moment) accept this new headcanon.
