ROH wasn't that hard to find. Most places in the US have a Sinclair affiliate station or Destination America. Impact was on Spike for a long ass time. New Japan was a bit of a late bloomer, not getting steam until 2015. Frankly, I just got so sick of WWE letting me down, so I looked for alternatives. I wanted more of what ECW had pre-2006, more of what CM Punk was bringing to the table, where Kurt Angle went and who was this Bryan Danielson in the comments of YouTube videos? Kinda sounds like you would enjoy a New Japan and their sports based presentation, especially the young lions, who we see grow and mature over time. AEW is great at the character growth stuff. Some fans think Paige will go to AEW for some reason but I think she will stick to gaming streams or whatever because even though she wants to wrestle I don't think even AEW would be crazy enough to clear her.
