I pretty much like all cheese. but I'm becoming partial to pepper jack.

Mariscapone: it is base of a lot of awesome Italian deserts, it is kind of like an Italian cream cheese.

 

Pecorino Parmigiana: Best parmigian cheese ever, great for pasta and pizza or course but also great as a seasoning.

 

Sharp Cheddar: the sharper the better.

 

Mozarrella: it is not just good on pizzas.

I like Gouda and brie. Good quality sharp cheddar is also good. I once had a provolone called Auricchio. It's a popular Italian brand, and let me say, it's the king of all provolone. There isn't much that's better than a really good quality cheese.
