Can pinkie predict when she'll die?

That depends on how the 'Pinkie Sense' works. If she has learnt what the 'signals' (/ phenomenon / whatever you wish to call them)  mean through experience, then no, she probably won't know because if any specific signal is given it will be an unfamiliar one. She might be warned that diving into a cake from 10,000 feet might be 'a bit of a doozy' though.

 

The alternative is that part of the 'Pinkie Sense' is understanding what the signals mean, in which case she probably would. 

 

Given that the 'Pinkie Sense' hasn't really featured since (so far as I am aware) it would seem that the concept has been dropped.

That is one of the larger problems with true predictions.

 

See, it is practically impossible to prevent what is predicted...  So if you see your own death, you are kind of out of luck.

 

Pinkie gets around this by predicting that something is going to fall instead of predicting that her friend rainbow dash is going to get hit by a flowerpot.  The former prediction allows Pinkie to save her friend from it.  The latter does not.

 

I figure she worked very hard at honing her predictions to things she could deal with.  Pinkie Sense is very well done in that manner.

Probably not, she doesn't have precognition. Her reality warping and pinkie sense is used for fun/ telling of immediate events like a falling flowerpot.
