Applejack's Day Off and Cart Before the Ponies are both pretty skippable IMO. Though really I never advise skipping any episode since obviously everyone has a completely different perspective of them.

Yep I am the guy alright...I mean, I do like the ones focused on Twilight, Starlight or the Mane Six though.

 

It is perfectly fine that you do not like those episodes, but you should not go tell other people not to watch them just because you did not like them. Most of those episodes were great! Really the only season 6 CMC episode you could get away with skipping is "The Cart Before The Ponies". (which by the way, I also thought was a great episode, but you would not miss anything if you did not watch it).  :D
