I don't play Skyrim that much, let alone use mods. I did voice a character in the mod Whispers of the Sixth House, however. *cough* excusemyshamelessplug *cough*

Just while ago stabilized my load order at the time about 413 mods though most good ones haven't been converted to SE yet so I'm still waiting!

One thing that is annoying is that when one mod screws something over in the game you need to comb through all of them to find the culprit. :/

I've got a list of 10 mods I feel are essential to any skyrim playthrough:

• Realistic Needs & Diseases - Everyone loves a little realism
• Frostfall - Adds to the roleplaying aspect
• Life Another Life - Roleplay aspect
• SkyUI - The original UI is baaad
• Interesting NPC's 
• Falskaar - Everyone loves a new continent
• Bandolier Bags & Pouches
• Complete Crafting Overhaul
• Hunterborn - for those sneaky bow playthroughs
• Immersive Armour + Weapons

I love modding my game till it crashes

Yes it has some of the best dialogued npcs i seen they all got so much character some of my favourites are the noble who starts in blue palace and then goes to windhelm when you speak with him and other is the stormcloak who is in alchemists shack near ivarstead I'm pretty sure they were from interesting npcs but because I also have inconsequential  npcs im not 100%
