Sausage and baked beans casserole

How To:

1. Precook the sausages, either grill or in the oven.

2. In a large casserole dish, or a skillet if you haven't got a large casserole dish, put in chopped onion and mushrooms and stir fry in olive oil over a fairly high heat for about 5 minutes. (I'd also got a courgette so some of that was diced and went in too.)

3. Chuck in a couple of chopped garlic cloves, a splash of Worcestershire sauce, same again of tomato ketchup (you're supposed to use a bigger dose of tomato puree but I hadn't got any). Bring back to a simmer (especially if puree).

4. Cut up the precooked sausages into small pieces and put them in, then lob in a can of baked beans, and stir in and reheat again until starting to gently simmer.

5. Transfer to plate.

6. Open gob, scoff.

(I had mine with some sourdough bread.)

You know you want to!

(As a guide, for one person, 2 sausages, half an onion, two flat mushrooms (about 2 - 3 inches across), or equiv.; 1 small (200g) can of beans.)

PS: of course you can use vegetarian sausages if you want. :D

I had some fried eggs, though it might be more accurate to call them scrambled eggs. Those things are my nemesis, and no matter how I try I can't make them come out right. :adorkable:
