Excluding Rainbow Dash, which of the mane 6 had an actual goal that they wanted to accomplish?

For example, did Twilight have a character arc or goal outside of simply wanting to be Celestia's student and learning about friendship? I'm not including Rainbow Dash because everyone already knows that she wanted to become a Wonderbolt.

Rarity wanted to open a shop in and live in Cantorlot. Fluttershy gets over her shyness and build an animal sanctuary was just out of necessity. The rest didn't have anything major.

Well, Twilight did find her  "purpose " in opening her school of friendship!  So she did that!  Also, AJ runs her family farm and has to work it every day to keep it going and deal with selling and managing the products that come out of it,  so she has a goal every season to do!

Pinkie Pie made the goal of her life clear in The Smile Song, making people happy. Looking at the posts above, that's all of the Mane 6 covered. All of them had goals, they just weren't as open about telling everyone about them because...they're not RD.

not really. she wanted to Live in Canterlot, but she settled for opening her boutique there, instead.

Fluttershy had always wanted to build an animal sanctuary. Back when “Fluttershy Leans In” aired, a lot of fans were left scratching their heads when Flutters had said that opening a sanctuary had been her dream for a long time. This seemed to come just as out of the blue as Twilight having a brother, to many people, but truth be told, Flutters has been dropping hints to wanting to be involved with a sanctuary ever since April 2013, shortly after the season 3 finale, when “Twilight Sparkle and the Crystal Heart Spell” book was released. Fluttershy suggested it to Twilight. This continued in season 4. Anyone remember the episode, Bats!? Fluttershy’s idea was to open up a sanctuary for the bats right there in Sweet Apple Acres. Even in Three’s a Crowd, Fluttershy flips out at the chance to go to the Equestrian Society for the Preservation of Rare Animals, which is pretty much a sanctuary, and very much likely wound up convincing her idea that opening her own one day was her dream, like she wanted to with the vampire fruit bats. Her dream has been around for a while- its just that few really paid it no mind until “Fluttershy Leans In”.

I don't think I remember Applejack or Pinkie Pie or Fluttershy having any particular goals. Most of them were simply existing in the background and Rarity wanted to open her boutiques. Twilight wanted to satisfy Princess Celestia.

None to the same extent, but:

Twilight very generally wanted to learn about friendship and also magic. Right now I think she also wants to stabilize affairs at her school. 

Fluttershy wanted to overcome her shyness and various fears. She has also seemed interested in meeting and taking care of as many animals as possible.

Rarity wanted to get closer to Canterlot high society, but I think she lost interest in that at some point. Recently, she’s also become interested in expanding her business.

Rarity most definitely, it was the only one that was ever as clear cut. Open up a business in Canterlot and become part of the elite

Would Fluttershy's goal of setting up an animal sanctuary count? Even though she fulfilled that goal fairly early on in the show?

Twilight wanted to study magic and friendship, Rarity wanted to live in Canterlot, Pinkie Pie wanted to throw parties for everypony, (And still is) Fluttershy wanted to overcome her shyness and Applejack wanted to be loyal to her family.
