How detailed and show accurate do you want your plushie? Are you planning to machine  sew or hand stich? what kind of fabric do you have? (felt, fleece, minky, cotton) have you got a pattern ready or do you need one? I'm a part time plushie maker, but as I do not generally do copyrighted chars, haven't done a show accurate pony, but I have done deer and such, so together we could figure this one out.

This one looks good http://www.ohsewgeeky.com/2012/08/26/my-little-pony-diy-plush-tutorial/ I might try it myself

Fleece is super easy to work with, but hand stiching is a bit labor intensive, but allows more room for fixing stuff. I would suggest you to cut all the peaces with a good seam allowance, and try to stich, than tweak the seams (let the too tight parts looser and tigten the ones that bulge too much) until it looks good, sewing is a creative process, do not stick to pattern if you do not like it. Give it a shot and say what's going ok and whats not.

And don't start too small or too large of a size, small is complicated, large is labor intensive.
