Tex Mex Enchiladas: The best Enchiladas in the world?

I've never been to Texas before.  But I've had Tex Mex-style Enchiladas when I was living on Maui(At a restaurant called Las Pinatas).  The sauce was my favorite enchilada sauce I have ever tasted, even the enchilada sauces here in California can't compare.

 

I did a little research on Tex Mex Enchiladas on the net and found out the sauce itself: Chili Gravy.  Mainly, it's a Flour-based gravy mixed with a bit of Chili Sauce(Or your own ingredients for making chili).  I have yet to make this sauce by hand, but I can imagine how good it will taste.

 

So I have a question for all of you who ate Tex Mex Enchiladas.  Do you think these kinds of Enchiladas are the best in the world?  Or do you know of a better Enchilada dish?

When I did try their enchiladas, I was really surprised with the huge amount of flavor and it's worth trying to eat the enchiladas. They are the best.
