But, sunset was originally a pony like Twilight, but, her destiny was to become a human? But if she was originally a pony there had to be another copy, same thing with Twilight. I wonder what was Sunsets first reaction to becoming a human.

nope. in EQD world would be a copy of pony Sunset))) not human Sunny. well that's my opinion. you can fantasy about that as long and wide as you want.

her reaction was similar to Twi's, but i guess Sunset was there not for the first time, she traveled to another dimension/world for long, before she come up with a plan and go there to stay till the time is right (then steals a crown etc).
