They certainly added more to her character in this clip. "Hands-on" does appear to be the direction they are taking her. In the previous clip she was seen dressed up in welder gear so there seems to be some pattern there.

Oh and who knows if this might also say something about a possible human world Sunset Shimmer. Twilight has always been heavily oriented towards getting to understand how the world works and that also appears in her human world counterpart. Sunset Shimmer is showing herself to be more practically inclined which is one important trait she could share with her possible human counterpart. Who knows if the human world Sunset Shimmer is working on Skynet as we speak XP

I wouldn't blame the writers if they swept human world Sunset Shimmer under the rug forever, but I could see them playing off the Sunset Shimmer we know, same as they did with Twilight. Watch her, having never had the chance to be corrupted by power, turn out to be some kind of perfectly well-adjusted leader of some community club somewhere XD

Come to think of it, I'm betting she wasn't doing much scientific research while she was worming her way into the spotlight at the high school. The idea might be that this is her starting to settle back into being herself, now that the bids for power and then redemption are both behind her.
