If you are going to collect all Enemy Info cards after reaching the 100%, you have to grind a lot. What works for me is the firwork ability (Bomb + Fire) and to just run through the first lvel of Pop Star and kill all enemies in my way.
I really enjoy to look behind the technical aspects of games and I noticed something that's very helpful in the Switch version of the game. It is possible to receive duplicate cards in this game, so when you reach the end of the level and receive a duplicate, it's very frustrating and it was all for nothin'. My tip is: Make a save point right before the end of the level, where the boss was the first time. Then leave the level to the right and check if the card is a duplicate. Kirby will make a disappointed face, if it is one. Load the save point in this case and wait 10 seconds and make a new save point. Then check again if it's a duplicate. If yes, repeat the process as long as you must. It's better than repeating the whole level again.
I noticed that the items will get reshuffled after every 5 to 10 seconds. And the card will be replaced by a new one. Waiting ten 10 seconds works for me and a new card is guaranteed (another duplicate or not). It's only possible thanks to the save point mechanic.
The game was added not long ago, so it might still help somepony.
