For me, I'd probably spend two days hanging around and talking to everyone in Ponyville then spend another two days in Canterlot visiting the castle and being a unique Human would probably be granted an audiance with Celestia and Luna. Then spend a day at the CE meeting Cadance and Shining Armor then traveling to Manehatten checking that out then finally going back to Ponyville and checking out the Everfree forest.
