I've even thought seriously about how rock farms work and I'm happy to say my theory isn't totally weird like the other ones I'd seen and uses real world beliefs on magic I learned reading about Wicca while still making sense in MLP. I'd love for the world of Equestria to be real... it's one of the few fantasy worlds I could see myself actually wanting to go and live in. Ponyville is very ..well pony heavy. Same with the dragons and the griffons. We've seen TWO mules. One sea monster. For that matter, what does the apple family keep pigs around for if no one's eating meat? Seems...wasteful in a way. If you look back at the episode posts I've made for the past few seasons, they are typically pretty lengthy and contain many similar observations and questions to those you've mentioned here. There is a part of me that believes the show is real, much how I believe that Narnia is real.
