Which episodes do I need to watch?

Well if you want to get all of the references and continuing plotlines you should watch all of them in order. The first two seasons you can probably watch more out of order than any others but make sure you watch them prior to season 3.

The bigger changes to the show tend to happen in the season premieres and finales.

 

The first few minutes of Season 8's premiere assume you have seen the MLP 2017 film

Season 1 episode 1,2,8,11,16,23,26

Season 2: 1,2,7,11,25,26

Season 3: 1,2,3,7,13,

Season 4:1,2, 6, 12, 13,18, 24,25,26

Season 5: 1,2,7,22, 25,26

Season 6: 1,2, 3, 13, 16,17, 25,26

Season 7: 10, 12,13, 16, 17, 25,26

Season 8: 1,2, 3, 8, 10, 15, 22,23, 25,26 

 

I probably missed some important ones. but that's a good starter pack.

The biggest moments of the series come from the payback of long arcs and mysteries built up by past episodes.

There's nothing wrong with watching the series randomly or just premieres and finales, but you may lose some of the building up for the best moments in the series.

This show doesn't have a running plot, especially early on, but here are the episodes that come closest:

season 1 episodes: 1+2, 3, 12, 24, 26. 5, 6, and 17 all introduce concepts which come back later, but only once or twice. 

season 2: 1+2, 3, 4, 7, 25+26. 

season 3: 1+2, 7, 10, 12, 13.

season 4: 1+2, 4, 5, 8, 10, 12, 16, 18, 20, 21, 24, 26. 7 introduces a concept which comes back a couple times next season, but which isn't necessary for understanding. 

season 5: 1+2, 3, 12, 13, 14, 18, 25+26. 11 introduces a concept which comes back later, but which can be understood without watching that episode. 

season 6: 1+2, 5, 6, 7, 9, 16, 21, 25+26. 3 introduces a concept which comes up in ep.9, but only briefly, and it's easy to understand without watching that episode. 

season 7: 1, 4, 8, 13, 15, 16, 25+26. 

season 8: 1+2, 3, 11, 12, 15, 16, 22. The finale is probably also important, but I haven't seen it.

No episode in my personal opinion is "necessary". Just watched what you want to watch to be honest. With myself, I watch all of them since I get the full picture.
