Mane 7?

I noticed that Twilight's cutie mark got an extra star in the MMM episode. Maybe they're planning for a 7th pony in the Mane 6? And if yes, what would that one be? Forgiveness? Or something else?

Not necessarily.

Because of Twilight's elevation to Alicorn in MMC, she earned that extra star. That extra star symbolizes her true understanding of magic and how she was able to create her own magic to help her friends regain their original cutie marks.

Ah, when something like this comes up, I think to myself, "aren't we overthinking it," then I realise, yes we are. Totally worth overthinking though, I highly doubt that they would add another to the main six.

I am not creative so... Battlefield

For now, it's a theory or speculation on the seventh star for representing a seventh element. The 7th star resembles what Twilight has learned ever since she came to Ponyville, her understanding of magic and friendship, and how much she has grown as a student also as the representation of herself.

For what occurred in Magical Mystery Cure, there was no mentioning of the mysterious seventh Element of Harmony.
