I'd do several things in order.

 

First, talk it out. Ask why? Their response shall dictate mine.

-No response: Run and hide. If pursued or found, fight back.

-They hate humans: Fight back.

-They want to rob me: Hand over my wallet or whatever.

-Kidnap: Fight first. Try to incapacitate. Then run.

-Psychotic/Sadistic: Fight back.

-Trial by fire. If I survive, I get (blank) in return: Just take it.

-Trespassing: O.k. I'll leave. Post better signs next time.

-Changeling test: Negotiate. Find some other way to test this out. If not swayed, then fight back.

-Human Hunter: Fight back.

-Rape: If Stallion- Fight to the death! If Mare- no resistance.

-Citizens arrest: Under what charges and with what evidence? Talk it out, say I'm not the guy. If not convinced or really did think I did something wrong, run and hide. If caught, fight to incapacitate, then run and hide some more.

-Intoxicated: Run and hide. If found, fight back.

-Fight Club (how do you know who you are if you've never been in a fight?): Throw down!

 

Nothing else on your list will work. Anypony who wants to inflict physical harm tends to be pretty intent on it. If anything, kissing, tickling, crying, attempted rape or devouring will make them even more violent.

I would be like.... The hay with this! Run, jump, roll, duck, move sideways. Or hold them down for sometime, and tickle them. RD would be hard to dodge but its possible, on the otherside I would tap twilights horn and tickle her. I also found something wrong in your question. If you were beaten up, how would you do anything in return? Now now. I'm saying and hopping I wouldent get to the point of getting beat up. Hurt yes, confused? Probably. Beaten up?
