Well, the whole vampire takeover is not happening right now. Shadow was split into a good and bad pony. The bad one is just planning right now. So she could just be in ponyville doing regular pony stuff.

 

I think id imagine symbiote ponies to look a bit like this

It looks like Plague. No, I'm serious, if The tendrils were on its back, longer and more Giratina like, it's an exact replica of Plague in pony form. All it needs are a bit more red streaks on the body and a unicorn horn.

Overall white, with black parts that resemble a skeleton (Like Anti-venom) And his poison and eyes would be a purple color.
