Mustaches and other facia hair is already canon. And griffons aren't the only one, there was a tennis playing pony seen in Call of the Cutie that has a beard.

 

Thus, haircutteries and barber shops much be canon as well. Also note how manes are treated more like hair as we treat ours.

 

I'm pretty sure there's been more, too, though I can't recall them off the top of my head. But I also think a lot of ponies in Apaloosa had facial hair.

 

Suggestion: It's a cartoon.

OK, here is a little Equestrian/cartoon Physiology.

Please note the entire beak in the picture above. The griffon is showing a facial expression, and he is showing teeth.

That can only mean one thing: Its not a beak. Its skin with muscles underneath. When closed the mouth does resemble a beak, but the resemblance is superficial only.

 

Skin is elastic, and this configuration is possible in real life, we just have no intelligent examples to point too. By intelligent I mean human level type intelligence. We have more than 80 muscles in our face with the sole purpose of providing facial expressions.

The Griffon above has a mouth with a bony structure like a dog: its elongated with a lot of teeth. The layer of skin and muscle needs be no thicker than what we see in a dog, so what we see is possible.

 

also note the mustache. Griffons sport feathers, fur and hair, and scales on the claws. They combine the features of both an eagle and a lion. In a real life example, the feathers are more likely evolved hair, parallel evolutionary concepts that resemble a birds feathers.

*** in any case the presence of fur or hair (in any form) on the beast allows for a mustache to grown on the skin of the mouth (the beak is really a muzzle in this case).

 

Why a mustache on an otherwise hairless mouth? It could be vestigial remnant of feline whiskers. Perfectly normal for a feline species like a lion, or in this case a griffon.

Wait, I'm not forcing memes, I think the animators didn't really think with animating (Derp).

 

Or, male griffons have small holes for hair to grow out in their beaks!
