Shape Changing

Was there any instance in  the show, besides changelings' transformations and Spike's "puberty," of shape changing?

Yes. In Magic Duel, Applejack became a colt, and Rarity and Applejack became older/younger. I don't know if those count as real transformations, since they were fake ones.

They don't imo. But the Snips and Snails horn thing might.

Luna's demonstrated some stuff during the Luna Eclipsed episode that might be shapeshifting, or it might be illusions. Hard to tell. The Nightmare Moon 'shift to mist' and Sombra's 'shift to shadow/smoke' probably count as shapeshifting, depending on your definition.

If you count Equestria Girls there was definitely some changing there. Not just Twilight becoming human, but also

they all grew ears and a couple got wings

at the end.

Luna can shape-shift into Nightmare Moon. She can change back into her younger self if her power is low in the comics though whether that is regression and not a shape-shift depends on the viewer.

 

This transformantion brings me back to te changlings. Can they only change into something their own size? we only saw the changlings turn into ponies and Crysallis into Cadence who being an alicorn might be too big for a regular changling. Not to mention having act the part (badly).
