I'd say beat'em ups have just evolved. The hack'n'slash genre tends to do much of what the beat'em up genre did. Games like Anarchy Reigns, Fist of the North Star and Splatterhouse have the same concepts. The main thing that's been cut out these days is the multiplayer factor and even that's not completely gone.

Everything gets repetitive.  On the Sega Saturn and PS1 there were some 3D beat-em-ups. But new games are sort of like that. Any game where you run around and attack enemies. But the classic, bare-fisted, street brawler perhaps is not as common.
 
Simple games like Pac-Man have moved to apps and web based. We are actually seeing home brew NES and SNES games, which is really cool. 
 
I'm afraid we will see the death of off line gaming. I wanted to play 2 player on one of the Battlefields and I was mad that you had to play on line for that. I don't play on line. I'm old school.

Platforming is another genre that hasn't died so much as it's evolved. Or rather that platforming as a genre will disappear but there will always be games with some form of platforming. The simplicity of the genre is wearing off on the majority of the gaming world so just jumping around isn't gonna cut it. There needs to be more to the game.

Point and click adventure style games are more or less extinct. (Maniac Mansion, Kings Quest, etc). I loved that style of game.

Other genres that aren't dead but have changed to offer a better gaming experience:

 

-Roguelikes. It's hard to find a genuine Roguelike these days. The features of Roguelikes are in a lot of games though. Things like randomized dungeons being the most popular, permanent death being a near-extinct mechanic.

 

-Puzzle games. Often sequestered to your mobile and handheld games these days since they require little actual production values to do what they're meant to do. A few sprites and clever design and they function as well, if not better, as before.

 

A genre that's either dead or sees almost no light of day:

 

-Tower Defense. Another genre that is often better used as a part of a game, rather than being the entire concept of it.

Musicals, Greek Epics, Narratives with theological underlayment (Les Miserablés notwithstanding), Operetta, Ragtime Jazz.

 

 

I think VG_Addict was refering to Video Game genres... :P

 

Also, I seriously hope musicals are dead. I seriously cannot stand them.
