Sure we only see those 4 living in the farmhouse but Applejack introduces a LOT of Apple's when Twilight first goes there in season 1 and then during winter wrap up there's a lot of ponies pulling those field tilling machines. Plus we know there's an entire wester orchard or was it eastern, so tired, either way that orchard is out of use due to fruitbats. My current theory is that those 4 are the permanent farmers doing the day to day running of the farm but other Apple's come round to help them during the harvests and planting seasons we just don't see them as they're background ponies.
