The Chaos 0 boss in Sonic Adventure.  It jolted the adrenaline rush for modern Sonic, packed with the music

Credo from Devil May Cry 4, timelessly fun. The fight with Vergil at the end of Devil May Cry 3 is also one of the greatest boss fights of all time to me.

The one to instantly come to my mind was Phantom Ganon, the boss of the Forest Temple in Legend of Zelda Ocarina of Time.

Mother Demon from Doom 64. It feels a bit cheap when you're fighting it for the first few times, mostly because that thing spams high damage fire, as well as other projectiles which annoyingly bounce you around. I genuinely enjoy the fight because there's a really satisfying sense of tension there. You're trying to kill that thing as quickly as possible, before it kills you and that allows it to be a very fast and intense fight.

I actually really like mogh from elden ring. I think its a pretty fun fight, and I helped a lot of people clear it; especially when the dlc came out.
