Meanest moment in the show

Well, he did tell her to "never apologize when you can criticize".

I'm not suggesting Fluttershy is blameless, she took the idea too far, but Iron Will gave her the idea.

There's a very big difference between what Fluttershy did and what Iron Will suggested. Iron Will said, "why do you have to apologize when you can criticize." As terrible as his advice was (and no one will deny that), he never advocated verbal assault. Fluttershy did this completely on her own, and the narrative scapegoated him for it.

Well Pinkie and Rarity scapegoat him for it, but Fluttershy correctly points out that they're wrong.

In a way, you're right. However, when Fluttershy does, Pinkie Pie and Rarity continue to not put the blame on her and instead shift it to Iron Will, and the climax began to treat him as the culprit.

Here's what I mean (from the transcript):

Fluttershy: [muffled] Pinkie's right. I'm the only one to blame. [normal] But don't worry, I'm never coming out of my house again. Everypony will be a lot safer with me and my mean mouth locked away.

Rarity: [muffled] Sweetie, [normal] Pinkie Pie doesn't blame you, nor do I. You just received some bad advice from that Iron Will character.

Pinkie Pie: Yeah! He's the one that made you act super-duper nasty. What I mean is, there are other ways to assert yourself besides yelling at everypony.

Rarity: Yes! [muffled] You can stand up for yourself without being unpleasant about it.

Fluttershy: I-I'm not sure I can. I'm too far gone. Whenever I try to assert myself, I become a monster.

[lightning strikes]

Rarity: Oh, sweetie, you're not a monster.

Pinkie Pie: No, but he is.

Right, but the lesson is ultimately that Iron Will isn't a bad guy, even if Rarity and Pinkie assume he is. He's a rational, honest, legitimate if somewhat misguided businessman(otaur). They were wrong and it's demonstrated by the show.

Eh, even though Fluttershy was definitely mean, I thought it was tame compared to what Scootaloo got from Diamond Tiara and Silver Spoon.

He literally uses the word “never”. I'm not sure what purpose is served by rephrasing it.

Iron Will did advocate verbal abuse (which is what I assume you mean above; "verbal assault" actually specifically involves threatening to bodily harm someone, so it's not the same as what Flutters did to Pinkie and Rarity) which can include many different kinds of behaviour, not just insulting someone. First he advocated for physical abuse (pushing Fluttershy into the goat and knocking him over as a demonstration of what she should do) then he rudely shouted at the goat, and encouraged Fluttershy to do the same thing.

He didn’t insult or belittle the goat, true, but in shouting at him and more importantly, telling her to do it too, he gave Flutters the message that it’s okay to be verbally as well as physically abusive in the name of being "assertive".

Well Pinkie and Rarity scapegoat him for it, but Fluttershy correctly points out that they're wrong.

True, they shouldn't have tried to absolve Fluttershy of the blame entirely. But then again, I don't think Iron Will should be entirely absolved of blame either.
