usually, just look to see what the certificate DOES contain, see if that resolves to the same IP, and if so, just connect to that.

The certificate would not contain such information ; openVPN bundles settings with the certificate / TLS-Auth, so I guess that's where you're coming from.

IPSec VPN is used though, with EAP authorization, meaning name+password instead of a private key.

Many SSL Vpns just use a normal webserver certificate - Cisco or Fortinet, for example.
