Considering that throughout history, horses have been decked out for war, gives one plenty of suggestions. Add to it the innate talents of the MLPverse, and there are plenty of options.

 

Archer ponies? They could draw with their teeth or their hooves (seeing as ponies can pick things up with their hooves. Just ask the Doctor). And an archer pony would look freaking bad a**! Total Robin Hood style.

 

Instead of a sword, which would weigh way too much for a proper swing, how about dirks? Throwing stars, and smaller blades. Also, the suggestion of specialised horseshoes is very viable.

And the armour, of course. Maybe a special helm made to mimic a unicorn's horn in appearance and used as a weapon (basically a helmet mounted blade)? It would make sense to fight that way. It doesn't interfere with proper head motion, and we've seen unicorns jab and slash with their horns.

 

If you Really want a sword, how about one with a hoof mount? Like an add-on (think Captain Hook's hook over his missing hand)? Less versatile than an actual hand, but then, so would mouth wielding.
