Just one hive? Would it be plausible for them to "infect" ponies and make them into whatever they deem fit? (like a mind-controlled pony/changeling worker, guards, ect.)

There's nothing in the canon that suggests they use ponies for anything other than a food source.

 

 

One more thing, do changelings have a "place" in fallout equestria, I don't recall reading about their role in the war or their presence in the wasteland.

 

No. I mean there are a few side stories that mention them, but they're never the focus to my knowledge. If they feed off of love, presumably they'd likely be extinct by the time of the present. Population got decimated, and if there's one emotion common in the Wasteland, love ain't it.

The fan fic I read part of is called changling prospective. It had a changeling as the protagonist. She was also a test subject in an attempt to create the alicorn princesses. It is where I got Crystal my changeling of for this world from.
