Celestia and Sunburst

with Sunburst being the former student of Celestia, why haven't we gotten more interaction with these two? No doubt there's an awful lot for them to catch up on, the the last time they were even in each others' presence was "The Crystalling", and with no time to spend around each other, given the circumstances.

I don't think he was ever a "Personal" Student of Celestia like Sunset and Twilight, but he DID attended the same school, and it's implied he dropped out!

As he said to Starlight: "Reading about magic is one thing, but you don't what it was like at Magic School, to know so much and not be able to do any of it!"

well, Sunbutt called him her student, sooooo....

I now he wasn't hoof-trained by her like Sunset or Twilight, but he still went to her school, as you said, which made him a student all the same.

Well, there are other characters we know that went to the school and haven't had direct interaction with Celestia. I want a Starlight and Sunburst focused episode long far more than I want this.

He was once a student at her school but he apparently dropped out after realizing that his magic wasn't as good as he thought so he moved to the Crystal Empire and hid himself from the public preferring to keep to himself. I assume that he moved sometime after the empire re-appeared so for a few years he most likely remained in Canterlot before deciding to go there. If anything, Sunburst might not have much of a connection with Celestia though there could be some details we don't know about. Instead, he is associated with the empire.

Agreed with everything you've said. One thing that is interesting about Sunburst is that I feel he symbolizes the difference between pure academia in a field that places a higher emphasis on practical application. He probably knows more about magic than most, but lacks the ability to apply it. Like a genius in advanced math who would not be able to apply theory in engineering. 

Or better yet, a Computer Science wiz who can't program.

we've already had a few episodes with Starlight and Sunburst interacting. Not much with Sunburst and Sunbutt

Besides their initial rekindling during a crisis and a fantasy, not much interaction. It's one of the pillar relationships for the character, and needs to be built further. Again, think like a writer. Think of the Elements of Style. Why would this be crucial before any substantive Celestia interaction?

Probably because there wasn't much of any interaction or connection between the two even though Sunburst attended her school once. Given the timeframe, Sunburst was likely in the school around the same time as Twilight too at some point in their lives, even if they weren't in the same year, yet they've never really had much interaction either.

That makes Sunburst a character a lot of people can relate to.

Sunburst went to her school, but unlike Twilight and Sunset he never was Celestia's personal student, so I don't see what an episode focusing on the two of them would accomplish.
