To be honest...I actually would choose Pinkie Pie. In certain case, it's not always about cupcakes and partying XD Somehow, she always stays on subject no matter how ridiculous her points may be. She may make it to where we'd be in the court room all day with so much confusion ensuing that it may have to be delayed. Plus, it would be fun. I wouldn't mind going to jail after watching Pinkie Pie troll a whole courtroom hahaha

Realistically, Twilight would be the only one capable if it. She's always studying. I don't see why she would not be studying pony law, especially since she's become a princess.

It's all about the written word of the law , and no pony should know that better than Twilight. She'd be pretty tenacious in gathering evidence. Look how fast she solved the MMMystery on the friendship express. The fact that the prosecution is trying so hard to break us means that they are scared and desperate. It's all a game of logic, reasoning and debate, paired with legal specifics and proof. Intimidation is irrelevant.

Twilight: Logic

She could make connections between pieces of evidence to come to conclusions and new information and evidence, much like Miles Edgeworth's Logic

 

Applejack: Lie-Detecting (in what's spoken)

Being the Element of Honesty, she could sense uncertainty in  a suspect's testimonies, much like Athena Cykes's sense of hearing with her Mood Matrix or Phoenix Wright's Magatama.

 

Fluttershy: Calming/Reassuring

Being the Element of Kindness and a shy pony, she could have the ability to reassure scared cilents/witnesses to open up.

 

Pinkie Pie: Confusing

Being a very random pony, she could cause very determined and focused suspects/witnesses to break and let information slip from their mouths and lips.

 

Rarity: Charming

With her charms, she could get some witnesses to talk to her thanks to powers of persuasion. 

 

Rainbow Dash: Perceiving (in nervous habits)

Being an athlete, there's no doubt she could perceive the little split-seconds of moments when a suspect's nervous habit gives them away, much like Apollo Justice's ability to see the truth with the help of his bracelet.
