Wowza...What a great show Cowboy Bebop was...

Moody, dark, but with humor when it needed it...a great, memorable and LIKABLE cast of characters...ultra-bada$$ fight scenes, of the gun, hand-to-hand, and spaceship dogfight varieties...and the music! Jesus...chills every time.

One of my favorite Anime that I think has a lot to offer is Ghost in the Shell.

 

My suggestion: Start with the Movies (Ghost in the Shell (feel free to watch the 2.0 version, not much was changed except the visuals), Ghost in the Shell 2: Innocence), then move into the TV show (Ghost In the Shell: Stand Alone Complex, Ghost In The Shell: 2nd GIG).

 

Also, FLCL [aka. Fooley Cooley] is a short 6 Episode OVA (I think) that has some good humor and can be out-there sometimes. Don't expect any concrete answers to come from the episodes, you're expected to put things together yourself.

 

Only other one I highly recommend (though honestly I say the Manga is better) is xxxHolic, a short series released by CLAMP (Same company behind Cardcaptor Sakura and Tsubasa: Reservoir Chronicle) that plays around with some of the ideas of the Shinto religion/philosophy. Has some funny moments, as well as moments that make you think, and even some that may bring a tear to your eye.

Jormungand. One of the very few animes I have seen that did not involve the popular tropes, and as the plot follows a gun runner and her band of hired guns it is fairly original for an anime, especially with how much it grounds its combat in reality.
