I think Pinkie Pie, since she would befriend anyone she meets. I think Fluttershy would hold back, unless something happens in which the human saved her. Then, after a period of freaking out, she would be fine.

 

I think the least trusting would be Rarity, since she is so hard to please. But Rainbow is also an interesting thought because the human would have to be super athletic or something.

Pinkie most definitely, with Twily a close second, due to her experience with them (Not to mention becoming one of them) in Equestria Girls. I'd think the ponies who would be less enthusiastic are Rarity and Flutty, unless said human is a child or baby (Hell, she might even adopt it  )

A lot of people have already said it, but definitely Pinkie Pie, for obvious reasons. As for Applejack, I disagree that she would be the least trusting.

Well, I think Pinkie is atleast mostlikely to seem trusting for sure, whether it's because she is almost oblivious at times or not is a different question(no i'm not trying to hate on Pinkie, I really like Pinkie, just stating some reason ;p.)

 

Plus she just likes to cheer up and greet everypony, so I assume a human wouldn't be to different to her.

 

As far as the least trusting and least likely to befriend a human, I feel like Rainbow Dash would, because if the pilot episode is any indication, it seems like Rainbow Dash was pretty quick to accuse and be distrusting of Twilight at first. Claiming she might be a spy and seeming suspicious of her for a while.

 

But I'm sure if other ponies trusted the human, especially those she's loyal to(Aka, her friends or the Princess) then I imagine she'd warm up too.

Fluttershy out of her interest in all living things, and Twilight out of curiosity.

 

I feel that the least trusting would be Applejack, she can be a little... conservative and set in her ways, and she seems to worry for the safety of everybody else before personal interest.
