Could Shining Armor be even more powerful than Celestia?

Shining Armor has a very strong personal talent.  His shields are probably stronger than what Twilight or Celestia could make.  Other magic though, not as much.  He is a specialist.

I highly doubt that, Shining Armor is considerably more powerful than your average unicorn there is no doubt about this and his military training has likely also afforded him considerable brute strength and endurance as well but Celestia is powerful enough to actually be able to move the sun and for the 1000 years Luna was on the moon moved the moon as well. It is true that Shining Armor can perform a powerful shield spell that even Celestia dosen't seem to know, but while that spell is incredibly powerful it is a defensive spell that would be very unlikely to be useful in actual combat (though it is likely he has other defensive spells that would be useful in combat) and take a significant strain on him. Celestia has access to magic that is restricted or even outright banned and while Shining Armor might have access to some of this magic as well, he probably dosen't have access to as much of it as Celestia.

But it was his actual love that Chrysalis used to blast Celestia down

No, not only that, they had a strong connection to magic since they were kids/teens, as shown in the canon comics when Starswirl is mentoring them. Luna was able to do a very powerful spell with no prior practice. As natural born Alicorns, they are naturally the peak of a pegasus, unicorn, and earth pony, except their Unicorn powers, are so far beyond anything else, even Starswirl pales compared to their power.

It was his and Candance's love for each other that stopped Chrysalis, not necessarily Shining Armor himself.

No, Shining Armor isn't stronger than Celestia. It was Chrysalis own strength combined with the love of Shining Armor that defeated Celestia, not Shining Armor's love/power alone.

His and Cadance's love is a lot stronger than everything Celestia is capable of too.

Shining Armor is really weak. Take Season 2's finale: Not being able to sense his love being a fake, and also simply being manipulated like that, yea.... Not strong enough.

What about Celestia? She's been written off so many times so that Twilight can save the day. If the writer had a choice, they would probably have made Celestia a little bit more realistic, and actually use the Sun to defeat every single enemy in sight.

Yes in a way because he has more LOVE. REMEMBER  emotions determine magic capacity power. Celestia mightve gotten less due to ponies not focusing their worship on her THUS her being so weak..... DAMN DID I JUST SOLVE THE REASON WHY TIA IS SO DANG WEAK!?
