I understand having it well done when you're young but seriously? The problem with a well done steak is it completely takes away the unique quality whatever cut you were having has. Some are tough, some are tender, some tear easilly into strips, some are juicier, and some melt in your mouth. It's all the same cooked slab when it's well done. If you do it for the char, then you just need a an extra hot grill with open flames.

Not that I go for it, but there's also the blue rare option for those who really want it raw and just have the outside singed.

I like my steak medium rare. Keeps the meat juicy and I can make the most of it.

That's very nice.

I like my steak well done and that is non negotiable.

It depends on the steak. A ribeye I'll want on the medium side of medium rare, because all the fat. But something like a sirloin I'll have rare. I've even been known to take a bite out of it before I throw it in the pan if it's particularly good looking. But the real upgrade to steaks is the sous vide thingie my brother gave me for Christmas a few years back. A few hours at the proper temp plus a quick sear and you've got a perfect steak that's not overcooked and oh so juicy.
