What!? I would never have alcohol in my manor! Well, maybe a little fine wine, but only to serve to guests!

 

In any case, I think a brewer would be your best bet. Not only would you always be able to make some up whenever you want, you could sell it on the market, probably making more then a jester could. You could also whip us up a couple of Molotov cocktails every once in a while...
