Unless I'm mistaken, you are not asking what we would be, but rather which time period we'd go to, yes?

 

I'd want to go to pre-classical Equestria, and hang out with Starswirl the Bearded and Clover the Clever. Plus it would be really cool to see Celestia and Luna before the whole jealousy/Nightmare Moon thing.
