But the Student/Young Six are uninteresting characters...I get why they exist, but did they need to be in as many episodes as they did?

One of those debatable things. It was good that they built a third group of "elements" from the allied races (to match the pillars and the mane 6) and "what lies beneath" added a bit more depth to their individual characters. I would have liked to see more character development for them, but of course they were introduced late to the series, and that door is now closed.
