Over the past two days I've seen the phrase "Head Canon" about seven hundred thousand times. Even though I know what it means, every time I hear/read it this is all I can think of...

Yea, it certainly is a hilarious case of homophones. I usually thought the same thing until I started delving into head canon constantly.

It means what you believe to be true. 
Canon means what is official.
"Derpy is a pegasus"

Fanon is what the fanbase accepts to be true.
"Derpy is a mailmare who loves muffins"
Edited because i hate the idea of Dinky being her daughter...

Headcanon is what you like to believe.
" Derpy is actually really intelligent"
