Near the end of Simple ways, after AJ shot down Trenderhoof's idea of moving to SAA, she was saying that he was a nice pony and all, but that she was a-- something, until Rarity interrupted to deliver the episodes moral.  

 

So any guesses as to what AJ was going to say about herself?

From the context it would seem that Applejack didn't even know what she was going to say, which is why Rarity stepped in. She was just fumbling for a polite way to say "I'm not interested".
