It would be quite sad knowing you'll have to see all of your friends and relatives die eventually, going through the loss for all eternity instead of ascending (or descending) into the "afterlife" if you believe it exists.
Unlesssss my special somepony (or somebody lol) happened to be immortal as well, then I'd probably be happy regardless knowing I'll truly be with them forever (assuming we never break up, though that almost seems impossible to hold on to for an eternity) .
1440p is a thing? It's going to be a long time before it's phased out considering I don't even know what it is (then again, I'm not tech savvy lol). I've never seen that option on YouTube which is why I assume it'll be a while before it's finally phased out.
I feel like eventually we're going to want plenty of head canon as the show nears its end (unless it's like Spongebob, but well..it's not that great anymore so..), keeping the show alive but fan-maintained.
An episode of 22 minutes doesn't cover a lot of the characters as an example. Doctor Whooves and Lyra don't get their own episodes, yet there's so much about them created by fans (that I would consider head-canon) so the show isn't just limited to what we actually see in each episode.
Braeburn seems very excited and enthusiastic about stuff like "APPLEOOOOSAA!", but I don't see that as a reason to view him gay. Maybe acting gay, but not in the homosexual definition (unless that's what you're asking, if people think he's a homosexual).
I should probably re watch the episode to get a better idea.

3.) Not too sure. I think delivery has to do with the fact that she dropped a piano on Twilight, so people gave her that occupation?
4.) Are you sure that's really Ditzy Doo? I always thought Ditzy Doo was the grey pegasus we all know and love, later given the name Derpy since see seemed rather silly.
