It's got to be Filthy Rich and his family seeing as they have a lot of money, yet that's not the only reason why I think this. They also know how to make good business deals that benefit themselves, their partners, and the general public, and can be rather influencial with regards to key decision-making.

The Sparkle family has a prince and a princess. One is the co-ruler of the Crystal Empire, the other is the leader of a task force known for saving all of Equestria multiple times and improving harmony across the land.

As to "How important is Filthy Rich?"  It depends on "How big is Barnyard Bargains?"

If the answer is "It is Equestria's answer to Walmart" then Filthy Rich is the Equestrian Sam Walton & the Riches are IMPORTANT.

If the answer is "It is more an old time General Store" then Filthy Rich is more a Pony Sam Drucker (storekeeper on the old Green Acres show). That is, "Prosperous & important locally but not much in the grand scheme of things."

So, looking at Sweet and Elite (set in Canterlot), I would point out that Fancy Pants seems to have a great deal of influence. (Old money, no doubt + perhaps a title)

Applejack's family because of their importance for cultivating apples. Apples are an essential part of Equestria's economy. Imagine if there's no cider or juice, zap-apple jam, baked goods and raw produce. Sure, there's other Apple family members producing apples too around Equestria but for Ponyville, her family has a strong historic tie to the founding of Ponyville.
