FL Studio 10. Hands down. I record all of my stuff onto it, I produce all of my music on it and so forth. Just a little protip, if you don't have a good condenser mic for vocals, get one. It's basically necessary. Any electric instrument sounds best with Line-In.

Audacity is pretty fantastic. It's nothing fancy, but it's easy to use and great if you haven't got any money to spend. I use it for recording instruments, and FL Studio for anything electronic.

If you've not got the actual instruments to hook up to Finale/Sibelius, then I'd still go with Finale (specifically Finale PrintMusic). Computer-compatible keyboards to play your pieces sound like an

I use Mixcraft 6. It's pretty awesome for a free program. There's tutorials all over YouTube.

 

FL Studio demo is pretty awesome, but you have to finish the whole thing without closing it, because if you save, you can't load it until you buy the program. Unless you can manage to get a crack for it. Hurray for The Pirate Bay!
