Like Megas said above, Wonderbolt Academy is pretty much all about how Rainbow Dash has grown into a mature, responsible leader. One who values her integrity and doing the right thing more than the goal she's been chasing since she was a little kid, or anything else. It was the payoff for all the struggles and stumbles she had in earlier seasons and showed that she's definitely learned from her mistakes, and has become an excellent hero and role model. I was very proud of her

Well considering Maud Pie only showed up in one episode so far, and she was simultaneously at her best, at her worst, and everywhere in between in that episode, I'd have to say Maud Pie.

It's a hard question, because Applejack's best is usually showed in small gestures, often in episodes, which aren't even HER episodes. For example, in Dragonshy, when she patiently helped Fluttershy instead of getting irritated and angry like Rainbow Dash. In Simple Ways, when she decided to show Rarity how silly she was acting. In Sisterhooves Social, when she was a good sister and inspired Rarity to try harder just to make Sweetie Belle happy and aware of the fact, that Rares is always there for her, even if sometimes they disagree or argue. In Bats! when she sacrificed her big apple just to save Fluttershy. Even in the very first episode of the series, when she treated Twilight as if she was a member of Apple Family...

 

Sorry, but I can't choose. For me it doesn't matter, what she's doing, because even in her worst I can see her best. Why? Because her friends and family are always the most important for her. She makes mistakes, but never because she's selfish. Hell, most of her mistakes is made when she tries too hard to make them happy!

Dash was at her best in Hurrucane Fluttershy. Daring Don't was her at her funniest imo and Testing, Testing, 1, 2, 3 was the most ive ever related to her. Read it and weep is a great showing too

 

Edit: oh and I have to mention Wonderbolts Acadamy too. That's her most admirable appearance. Putting the safety of her friends and others above a dream (given the context) is an amazing moment for her. It's also the only Merriwether Williams episode I really like

Apple Family Reunion without a doubt, it was the one episode that made me pick a favorite AJ episode. They didn't explicitly mention her parents death aside from subtle hints like the shooting star scene but I found the whole touching. You could feel Applejack was trying to honor the memory of her parents even though she tried way too hard, even if she missed the point at first that she remember what actually mattered.

She certainly had her moments (good and bad) in Mare Do Well. Hated too much, in fact I'm not sure why it's hated. There are far worse episodes (in season two even)

But I personally like the episode because to me seeing Rainbow Dash become a celebrity, gain a massive ego trip, and have her own fan club is all freaking worth it. Plus Mane Five evil envy was fun for me to watch.

I've always liked Dash from the beginning, because of her ego and cockiness. Sometimes she goes too far (not just with that but also with her expectations of others and the occasional fan-girling) and is oblivious to how others perceive her, but I think that makes Dash an even more realistic and endearing character. She acts like a real person with flaws I like in characters and can relate to.
