I think it is because she is a very energetic, enthusiastic and lively character she is not Pinkie Pie hyper at least most of the time but she is brimming with energy. And she is just so adorable that combination of traits just seems to work on so many levels when it comes to spoofs and parodies.

Individually, the CMC are very fun to parody even when they are being interpreted as something else. Granted that Sweetie Belle is adorable and energetic, it is very easy to have her in spoofs and parodies.

I like all the cmc. 

I think she's my least favorite (i swear that's not a knock and no she's not last by alot there only 3 of them).

I like to think of the CMC as the lovable losers of the show.

and sweetie bell is kinda choosing to be there.

where as scoots and apple bloom kinda need to be a the rung their at.

It also helps that she gets a lot of the best lines and reactions among the three. Her "Oh, COME ON!!!" in Hearts and Hooves day is to me one of the funniest moments in the entire series.

 

It's her infectious energy that's very easy to play with. Even if you're completely inverting it by turning her into Sweetie Bot.

Sweetie Bell is awesome! It's no wonder everypony wants to spoof, and parody the robopony. Also, she is the younger sister of the fabulous Rarirty, so there's that too.

Well, personally I just love the thought of a demon-possessed filly trying to fit in and act 'normal' in the least conspicuous way possible.

 

I guess it's because at the time I didn't really care about the Cutie Mark Crusaders too much (barring Scootaloo) as they seemed to be just mini-versions of their big sisters and I think in that regard, the contrast they were given in both 'Mentally Advanced' and 'Rainbow Dash Presents' made them more interesting.
