Just because it's Sweetie "Belle" doesn't make it Rarity "Belle", as evidenced by Shining "Armour" and Twilight "Sparkle"

 

As nice as Rarity Belle sounds, there's too many other one named ponies (Fluttershy, Scootaloo, Cheerilee, and Braeburn are who I can think of off of the top of my head) for me to think she has to have a last name. She's never been recognized as having a last name, she's just Rarity, and she's fabulous

Again, I just don't think surnames exist in Equestria. The Apple Family is called the "Apple" family by tradition, in my opinion, because they always name their children something to do with Apples because it's the family way. They're not born with the name Apple, just like Rarity (Or Sweetie, for that matter) was born with the name "Belle."

His full name would be Twilight Shining Armor.

Because only "Shining" or "Armor" as a first name (or last name) sounds odd.

I personally enjoy the White Zinfendel headcanon when it comes to names. Names work in the same way they do on Earth, but royalty have lengthy names that get shortened. Can't remember them all, but they go along these lines of...

But the problem in proving this is hard, here's my try:

I believe at some point Lauren Faust said that Apple Bloom is Apple Jack's neice, not sister. (It's not uncommon for nieces/nefews to call their aunts and uncles "brother" and "sister" if the aunt/uncle is young enough.) I don't think it is ever stated that Big Mac is really applejacks brother, or he may go by a nickname. Granny Smith is easily proven a nickname.

 

As for twilight and shining armour, that's tricky. We could say its again a nickname, but that could be pushing it. Other possibilities include a name change, something to do with him marrying into royalty, the fact that "Sparkle" and "Shining" are nearly synonyms doesn't help prove this, so idk.

 

While the evidence is there, it's hard to make it come together.
