Why does food always taste better re-heated the next day ?

Ok most of us have come across the fact that a soup or stew always tastes better the next day when re-heated. Is it just a case of the food maturing more and allowing the flavors to develop, or is there something more to it.

 

Just for experimental sake last month I cook a big pan of beef stew. It was nice the day I cooked it, It was even nicer the day after that, but what was left I put in the freezer, and today, one month later, I have defrosted it to eat and see what it tastes like. Hopefully I should be in culinary heaven in the next 10 mins, or failing that, my next post will be from my hospital bed in A&E suffering from food poisoning :yay:

I think it depends on the food I think pizza doesn't taste as good but other foods may, its just it changes the food thickness or changing the flavor.

A good home made soup, or stew, does actually taste much better if left overnight and then re headed the next day, ya should try it :rarity:

Its most likely the broth thickened, I my self like  thicker broth.

They don't

 

I find most foods like soups and pizza lose their luster when they're reheated, especially with the microwave. Not to mention a lot of foods are at their best right out of the oven

And the less I say about leftover seafood the better

Well the month old stew experiment was an outstanding none event -_- ,

Even after re-heating it a second time and allowing it to slightly burn a little to try and impart some sort of flavor to it, I ended up with a bowl of gelatinous mush, with only mild flavor.

 

So lessons learned;

1 Food tastes good the day and time it is cooked.

2 Some foods taste better re-heated the next day and some don't

3 Food left in a freezer for a month and then thawed n' re-heated tastes of nothing in particular and will probably result in me ringing an ambulance in the next few hours :lie:


 

 

especially with the microwave

Microwave oven is best know destroyer of food and flavor to man and pony kind :derp:

Re-heated chili tastes fine to me but I absolutely can't stand reheated pizza. It just tastes really gross and hard to eat, as is eating pizza that's been cold. Either way I'd rather eat stuff that's been freshly cooked.

In my opinion it's chewier and tasteless the next day or two. Leftovers are bleh to me.

For soups, I think it usually tastes the same reheated (within a reasonable time, like, a few days).  However, when you have random leftover food items, sometimes you can make the soups better by throwing other leftovers into it.  My mom one day had leftover veggie soup, and then leftover turkey, so she just threw the turkey in the soup, put it on the stove in a pot and viola, it was great.

But, for pizza... nooope.  Reheating pizza is a big no from me.  I actually prefer it COLD right out of the fridge.  Casey's pizza tastes great cold, lmao.

Some pizza taste great cold even if it isn't as good as fresh, but some not as much. I do reheat pizza though but never in the microwave as in my personal experience it tends to turn out tasting like rubber that way.

Interestingly, I think the opposite. I like food eaten just after being cooked. Not a fan of the microwave to be honest.


All my life needed was a sense of someplace to go. I don't believe that one should devote his life to morbid self-attention. I believe that someone should become a person like other people.

The food bits had more time to soak up to the beef stock in the soup giving them a more full and rich flavor. And if you didn't softened up them before they have become softer now since they sat in the soup longer. Soft carrots and potatoes taste better than ones that are more solid. Though for other vegetables like onions I prefer them fresh and crispy.

As for pizza, I love it hot and fresh, I make my own, but I will eat it cold the next day as a snack, that's if there is ever any left which there normally isn't :yay:  Re-heated pizza is like trying to eat the spare tire from the car

My whole family always says our homemade potato soup tastes better the next day, and I've always thought it was crazy. I don't typically like leftovers, and prefer to eat foods the day they're cooked. Maybe it's because I've gotten sick after eating reheated foods or maybe I just don't like how certain foods get much softer, but I almost never eat leftovers unless it's my only option m

Food that is far past it's expiration date isn't really good though. Though there are foods like aged wine or certain assortments of cheese that make it up there with being better the longer it's been around, though I would say that's an acquired taste. But then there are foods that are somewhat preserved for long periods of time using a special method such as drying out or being canned that makes it taste even better than cooked food like beef jerky or canned food in general.

Also, while the food continues to cool after you've eaten, the water evaporates away leaving a more intense flavour behind. Things like pasta, potatoes, rice, etc most certainly do NOT taste better when reheated. Pasta is edible but absolutely gross when reheated.


I'm not a medical expert, psychologist, psychiatrist, teacher or love doctor. Take my words with a pinch of salt, yeah?

 

I am an experienced cook, musician and care worker though, so that's something.

Probably because they are starchy foods that eventually harden. Potatoes seems to be the exception as they stay tasty all month long.

 

Food with a lack of water seems to give out the flavor in full blast. That must be why beef jerky tastes so good for meat with no water in it. There's also those dry icecream that astronauts eat that taste damn good.

french fries are impossible to make taste good if you have to reheat them

spaghetti and pastas are pretty bad as well, especially in the microwave

 

pizza and most other things are acceptable if you reheat it in the oven and not the microwave

Maybe because its like sorta cooked longer and when by the time you reheat your food its like marinated I guess.
